With the hectic pace of life today, the slow cooker is an important part of the kitchen. Just pop the ingredients into the slow cooker, plug it in, and turn it on. Your dinner will be cooked while you are away.
Here’s a good meatloaf recipe for the slow cooker.
American Style Meatloaf
11/2 pounds lean ground beef
11/2 cups panko bread
1 cup tomato sauce
1/2 cup onion, minced, lightly sauté
2 eggs, lightly beaten
1 teaspoon salt
1 teaspoon of pepper
8 slices cheddar cheese, cut into strips
1/4 cup tomato paste
In a large bowl, mix all ingredients except cheese and tomato paste. Form a bar with half of the mixture. Place 8 cheese strips on top of meat and top with remaining meat, pressing edges to seal. Place in slow cooker and top with tomato paste and remaining cheese slices. Cover; cook over low heat for 6 to 8 hours or high heat for 3 to 4 hours.
Fluffy Meatloaf
Heat the oven to 350 degrees
Bake 1 1/2 hr.
Mix everything together:
1 pound ground beef
1/2 pound ground pork
3 slices of soft bread, cut into chunks
1 cup of milk
1 beaten egg
1/4 cup onion, minced
1 1/4 salt
1/4 teaspoon pepper
1/4 teaspoon garlic salt
Mix all the ingredients. Form a loaf in a shallow baking dish, drizzled with oil.
Bake for 1 1/2 hours or until done.
Mini meat loaves
Preheat the oven to 350 degrees.
Spray a baking sheet with cooking spray.
1 1/2 pound lean ground beef

1/4 cup tomato sauce + 6 tablespoons tomato sauce
1 tablespoon mustard
1 beaten egg
2 tablespoons cornmeal
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon pepper
Combine meat, onion, 1/4 cup tomato sauce, egg, cornmeal, garlic, salt, and pepper. Shape into 6 oval loaves (21/2 inch x 41/2 inch). Transfer the loaves to a baking sheet. Spread 1 tablespoon of tomato sauce over the top of each loaf. Bake until an instant read thermometer inserted into the center of each loaf reads 160 degrees, about 40-45 minutes. Let stand for 5 minutes before serving.
Tip; To shape the meat mixture into a loaf, prepare the mixture as directed. Turn mixture into 8x4x2-inch pan. Lightly press the meat around the edges, separating it from the sides of the pan. Smooth the top. Or form an 8×4-inch loaf of bread and place on a baking sheet. Smooth the top and bake as directed.
